Fall is a time for me when peanut butter takes a backseat to pumpkin. Well, maybe not the backseat, maybe just the passenger seat. There is nothing wrong with pumpkin, and the fact that it’s orange is just frosting on the pumpkin cupcake! It’s funny because rarely do I eat the obvious: pumpkin pie. Instead I’m all about pumpkin oatmeal, pumpkin enchiladas, pumpkin bread, pumpkin spice spread (serious?!), pumpkin ice cream and pumpkin pancakes. Something I love even in the Spring and Summer is pumpkin smoothies. And not just for dessert!
Pumpkin Smoothie
- 1 medium banana, frozen
- 1 cup soymilk (half can be yogurt, for thicker smoothie)
- 1/2 cup canned pumpkin puree
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1 tablespoon maple syrup
Break the banana into chunks, and place in blender or food processor with remaining ingredients. Blend until creamy-smooth. YUM!
